Today we would like you to join us at the table to learn more about how our cuisine has been shaped by our land, among the forests and mountains. We will tell the tale through some traditional local dishes which are just like us: genuine, straightforward and authentic, the products of our surroundings. We like to introduce you to some of our best-loved dishes and where else could we start than with pizzoccheri pasta, the undisputed king of Valtellina cuisine. Alongside it stands bresaola, a mouthwatering type of air-dried beef. Another important member of our culinary royal family is polenta, with its strong and robust character. It is supported by noble lieutenants, such as game salami, cheese and mushrooms.
Not forgetting sciatt, little cheese fritters made with buckwheat. And, accompanying it all, the local red wine, produced by heroic vine growers who defy nature, and Levissima water, tapped from natural springs among our mountains. Lastly, there is bisciola, a fruit and nut cake eaten all year round.
